V6 Alfa Engine oil Temperature

I had the GTV6 out on a rally track again over the weekend.  Taking kids with cancer and their families for a ride at Camp Crystal.  Something I have been trying to work out is what is the maximum temperature I should run the oil at and whether I should have an oil cooler or not.  Being a rally car it runs a sump guard which completely shields the sump from the air flow. 

I have noticed over time now as I am getting more serious in the car on stages it is running at up to 120C maximum.  A rally stage will last normally around 10-15 minutes.  Normal cruising it sits around 90-100C.  I run Penrite HPR 15 and I have not found any definitive information on what they recommend.  What do people see on their track engines and what is allowable?

I run a track 24 valve, the engine builder recommends 110-115 ideal operating temp using Joe Gibbs XP8.

My 24 valve 3.0 litre runs oil 80C (water 70C) on the freeway. Hard driven on the track - oil 120C (water 90C). No problems yet, I use Castrol Edge 10W60 synthetic oil - a bit pricey but engines are valuable.
