Advice on replacing thermostat

Hi all,
I suspect my 72 2000 GTVs thermostat is stuck open; temps don't go above 130-140 F even during spirited driving. Should i perhaps troubleshoot temp sensor/gauge? Please let me know, very new to 105 ownership. Anyway, i was wondering what the consensus is about sourcing thermostats here in Australia, particularly Sydney City and surrounding. Will a Tridon thermostat form SCA do? I really have absolutely no idea. Alfaholics supply a high flow thermostat which they claim deliver +3 HP, probably due to reduced intake temps, but I can't imagine the oil temp and consequent performance is optimal under slightly colder conditions, let alone fuel atomisation and consequent air fuel ratio; while im on the topic, has there been any successful attempts to block off and reroute the intake manifold coolant pipe? Seen this done on many hotrods over the years.

A short crash course would be greatly appreciated.

If the car is not showing signs of overheating, I would rule out a faulty temperature gauge and more than likely the thermostat is stuck open and requires replacement. A simple test for good thermostat is when removed from housing is to place it in a boiling water and see that it opens. Another simple method without removing from housing is to squeeze top radiator hose when engine is cold and see it holds water within the space resistance, ie; radiator hose is firm.
