Cylinder Head Questions

My car (2.0 1985 GTV) is leaking oil from the head gasket at the rear of the engine. I plan on sorting this out very soon but was hoping for some advice before commencing. I have an excellent mechanic who will complete the work.

What head gasket (manufacturer, supplier, etc) should I use?

Also are there any economical to achieve modifications that can be made to the head, mild porting, valve seat angles, etc that could be worthwhile?

Anything else that should/could be done whilst the head is off?
